- In a small saucepan prepare the custard. Pour in the milk, egg, sugar, and flour, then whisk vigorously until well combined. Then add the vanilla pod and lemon zest.
- Transfer to the stove and cook for 5-6 minutes, removing the peels and vanilla pod halfway through cooking. Keep stirring until the custard has thickened.
- Once cooked, let it cool. In the meantime, cut the apple into 4 parts and then into slices.
- Place apple slices in the pan and sprinkle with sugar and cinnamon. Cook for a couple of minutes until the sugar has dissolved.
- Spread the custard on the Pinsa, add the apples in a fan shape.
- Bake in a preheated fan oven at 250°C (480°F) for 5-6 minutes.
- Strain and finish with a few sprigs of thyme.
