Here’s how to make it:
1. Thinly slice the aubergine, coat the slices in flour and fry them in hot oil for a couple of minutes until golden brown. Drain on paper towels and sprinkle with salt. Slice the mozzarella.
2. Divide the pinsa into 4 pieces and toast them for 3-4 minutes, depending on how crispy you want them.
