  • 1 Classic Pinsami Pinsa
  • 1/2 aubergine
  • Flour
  • Extra virgin olive oil for frying
  • 1 mozzarella
  • Sun-dried cherry tomatoes to taste
  • Salt to taste
  • Fresh basil to taste

Did you know you can also make a delicious sandwich with a pinsa? With Pinsami, it’s a piece of cake!

We suggest a Pinsa Parmigiana Sandwich made with crispy slices of aubergine, fresh mozzarella and tasty sun-dried cherry tomatoes. Serve it with drinks or as an appetizer to wow your guests!

Here’s how to make it:

1. Thinly slice the aubergine, coat the slices in flour and fry them in hot oil for a couple of minutes until golden brown. Drain on paper towels and sprinkle with salt. Slice the mozzarella.
2. Divide the pinsa into 4 pieces and toast them for 3-4 minutes, depending on how crispy you want them.
Now, assemble your pinsa sandwiches with the aubergine, basil, mozzarella and sun-dried cherry tomatoes.

Et voilà, your original pinsa sandwich is ready to be enjoyed!
